Fine dining runs in the family for this culinary maestro. Anthony grew
up near the city of Lille in northern France where his father was a
chef, and he always knew that it was his destiny to follow in papa’s
footsteps. After culinary school at the renowned Michel Servet,
Anthony was the Executive Sous Chef at Hotel de la Treille in Lille
before moving to the States where he became the Executive Chef at La
Maison in Houston, a Chef/Partner at Faubourg in Sierra Madre, an
Executive Chef at Callaway Winery in Temecula, and was most recently
Executive Chef at Firefly in Los Angeles. This perfectionist is so
dedicated to his work that he admits it can sometimes come before his
personal life, but Anthony wouldn’t have it any other way. Food is
his passion and he allows nothing to stand in the way of delivering a
perfect dining experience. While Anthony has cooked every kind of
food, he is passionate about the French embrace of seasonality, and he
is thrilled to return to his culinary roots by serving tantalizing
meals to the lucky guests of Chateau Rosabelle.
